Porcupine Meatballs

We recently discovered this easy, quick and tasty meal. Hope you will enjoy it, too!

Porcupine Meatballs
(meatballs with rice cooked in tomato soup)







250gr minced beef

½ onion, chopped

2 gloves garlic, crushed

½ carrot, grated

1 teasp dried  mixed herbs

1/2cup short grain rice

150gr pasta

500gr tomato soup

1 ½ cup water

1/2cup milk

1 tablesp chopped fresh parsley

3 tablesp grated parmesan for serving


  • Combine the minced beef, onion, garlic, carrot, herbs and rice. Add some salt and pepper.
  • Mix well and roll into 16 balls
  • Heat tomato soup, milk, 1 1/2cup water (375ml) in a pan to boil
  • Once boiled, reduce heat and add the meatballs
  • Cook for about 20min, stirring occasionally
  • When all is cooked through add parsley and serve on pasta, top with parmesan cheese
