With every move, we need to bridge a few weeks in a temporary apartment until we find a new home and our container arrives. And more often than not the kitchens are not really well equipped.
We manage, we have all the basics like 2 pots and a pan and knives. But no extra electrical appliances and right now we don’t have an oven either. It’s funny how much you can miss one if you don’t have one. And apart from that as well the kitchen essentials are not stocked up that easily either. It’s always shopping on what we need basis. You don’t want to fully stock up before the move the permanent place. I know that shouldn’t really matter after all the food will be eaten but still. It all feels … temporary. Do you experience similar when you move?
So, after a couple of weeks, I now started to feel a bit restricted, deflated and miss my cooking inspiration. The kids started complaining too. It all got too boring and repetitive, so we started to look more into one-pot-dishes.
One-pot dishes tend to be easy to do and fairly quick to cook. You can pre-prep and just put it all together when dinner time comes around.
If you are in the need for something easy and quick (and in one pot) try the below recipe! I found this one a couple of years ago in Periplus Cookbook – Kids Fast Food and we’re all still enjoying it.

(meatballs with rice cooked in tomato soup)
250gr minced beef
½ onion, chopped
2 gloves garlic, crushed
½ carrot, grated
1 teasp dried mixed herbs
1/2cup short grain rice
500gr tomato soup
1 ½ cup water
1 tablesp chopped fresh parsley
3 tablesp grated parmesan for serving
Combine the minced beef, onion, garlic, carrot, herbs and rice.
Add some salt and pepper.
Mix well and roll into around 16 balls.
Heat tomato soup, milk, 1 1/2cup water (375ml) in a pan to boil.
Once boiled, reduce heat and add the meatballs.
Cook for about 20min, stirring occasionally.
When all is cooked top with parmesan cheese and serve with pasta or baguette.
